Sweet Potato Ramen Buns

4 sweet medium sweet potatoes (yams)

4 large eggs

2 tablespoons garlic granules

2 tablespoons avocado oil (such as Primal Kitchen Avocado Oil)

salt & pepper to taste

Beef Patty

1 lb 80/20 grass-fed beef

4 tablespoons Spice Cave Land - Savory Garlic Seasoning

Fresh Arugula




For the Sweet Potato Ramen Buns

  1. Peel sweet potatoes and spiralizer using the noodle attachment.  Place into a large bowl and season with garlic granules, salt and pepper.  

  2. Place a large skillet over medium heat, add avocado oil and allow to heat for 30 seconds to 1 minute.  Add sweet potato “noodles” and toss with tongs until “noodles”are slightly browned and cooked through, about 5-8 minutes.  Add the cooked noodles back to the mixing bowl and chill for 5 minutes in the refrigerator.

  3. Take the bowl out of the fridge and add 4 eggs. Toss lightly until eggs coat all of the noodles. Fill 8 ramekins (8 fl oz volume) about 3/4 of the way with the chilled noodles.  Place a small piece of parchment paper over the top and place a weight such us a small mayo jar on top.  Refrigerate again for 15 minutes or longer.

  4. Now that your noodles are coated in egg, fill an 8 fl oz ramekin ¾ of the way with

    noodles. Place a piece of parchment paper over the top of the noodles and place a weight of some sort over the parchment to allow the noodle to hold better ( we used our primal kitchen mayo jar as our weights).

  5. Place in refrigerator for at least 15 minutes or longer.  Remove from fridge and turn out each noodle patty into a skillet set over medium-high heat.  Cook until golden brown, adjusting the heat so they don't burn.  Flip and continue cooking until golden brown on both sides.  

For the Burger Patty

Mix the ground beef with the Land spice seasoning and divide equally into 4 patties.

Pan sear on medium-high heat for 2 minutes per side, or until done to your liking 

Assembly of Ramen Burger

Start with a ramen bun and add chipotle mayo, arugula, burger patty, coleslaw and top with a ramen bun.  Repeat with the remaining 3 and serve immediately.
